I think it's probably if you are going to take it really seriously or just play for enjoyment is the first question. But, if I was going to Vegas to play in those games, and I thought my game was better than pretty much anyone I sat down with, I would want to buy in for the maximum amount I could every time.
I promise you though that if you play short in live games, you will never ever ever ever have to worry that your opponents will fold against you. If fact, I imagine you could find tables where you push UTG with a really narrow range and get called in 4+ spots shortbuying. Fold equity rarely exists with full stacks in NL 1/2 and 2/5 IMO.
I would also decide how much money I would be playing with before I went somewhere and take it out of the bankroll online and not be afraid to lose it.
So, I like a full buyin at every table you go to...unless you want to play drunk. But, I would recommend live LHE monkey poker if you were wasted and wanted to play.
