I put them on some sort of draw and the turn and river completed any of them, whether he had a backdoor flush draw or just the straight, maybe a bluff. I got 2 cards to fill up for pretty cheap. Seems pretty typical to me because with so many cards completing so many draws, I'm never quite sure what to put people on.

I know people LOVE to have JT in there hand and that's what makes the nut straight. Some people try to be fancy but since he bet out on the river when the flush hit, he's either pretty stupid to bet with only the straight seeing that either of us could have the flush so I'm not sure what draw he hit, but very likely he has me beat.

This is Party poker $ .25 game we are talking about here, lets not get too analytical. Most will bet the pot on the straight. To get them to call the pot with only 7 flush outs or 8 straight outs is a big -ev on their part which is where I like to keep my opponent. If they fold you win the small pot. To check is to let them see a free card with no risk. In their situation I would fold to a pot sized bet or be extremely happy when my free flush or straight hit and count my saved chips from the check when it missed.
