(yields 8-9 Belgian style waffles)
4 tsp dry yeast
3 cups warm milk
3 eggs separated
1 stick butter(1/4 lb)
2 oz vegetable oil
1/3 cup sugar
2 tsp genuine vanilla extract
1-1/2 tsp salt
2 cups all purpose flour
2 cup fresh whole wheat flour
In a small bowl, dissolve the yeast in 1/4 cup warm milk (not over 110 degrees). Let it stand for about 10 minutes or until creamy.
Warm the rest of the milk to 110, letting the stick of butter melt into it.
In a large bowl, beat the egg yolks. Add 1/4 cup of warm milk/butter mixture and mix well.
Mix all the dry ingredients in a bowl. Slowly stir into the liquid with a whisk. Do not over stir, a few lumps are acceptable.
In a seperate bowl, beat the egg whites into a stiff peak and fold into the batter.
Cover the bowl and let rise for a minimum of 1 hour.
Cook according to your waffle makers instructions.
Serve with any topping of your choosing.
