In my opinion, you should do whatever sticks out in your mind. Some people try to provide an example of their day by providing one or two hand histories (or summaries of hands), others leave the numbers out there in terms of the day's winnings and let you decide on how it went.
I'm all over the place and include a fair amount of my life outside of poker within my journal (with some mild exagerration or minimizing). Part of writing my journal is making it my own. Just covering poker wouldn't exemplify this. Plus, so often outside factors can affect our play at the table and sometimes I don't necessarily realize this.
In terms of tracking day to day stats, I keep track of all my daily data in a simple text editor while I play (online). Once I'm done, I take the information and input into my database and from there I can run all kinds of reports. The summary of each table I play is included at the end of each of my daily entries exactly as I have them written down. After these, I include the updated statistics overall for that month (or other time period).
