I think you are giving UTG too much credit for having a big pair. I would certainly assume AJ+ (sooted or not) along with 88+ would be in his opening range from that position (they are in mine) which means that you are behind only to the 3 bigger pairs, a slight fav over the unpaired overs and a very big fav over the underpairs.
This is a weird situation, I think calling his minibet is probably the best play. You are getting close to 25:1 stack odds on him plus you still have the MP caller, not to mention the Button to deal with after your action.
