I play in a very different style, but anyway.
Hand 1. His overbet is not neccesary indicates that he doesn't want action, may be he has some read on you or has some other reasons. (I remember 2 hands when I got lots of action when I flopped sets of aces, slightly overbet pot on flop and was raised big by second pair in one case and unimproved pocket pair in another, they probably used the same logics. ) So I don't like it.
Hand 2. What if he raised with premium hands? Even AK, AQ, JJ call you here.
Calling is a bit more interesting, but I think that with AA, KK push on flop is better, with so much money in the pot you are just happy to take it right now. So I am not sure that he would believe you that you have a good hand when you call him. So I would just fold.
Hand 3. Most likely I would call this against an unknown opponent, though AA is very likely. If I played with him a bit (at least 200 hands) and he did nothing stupid I would fold this.
