I do a lot of cooking
here are some of my favorites (I will post more later when I get home)
a few of these recipes I got from allrecipes.com pretty decent site
Raspberry fruit dip
1 cup sour cream
1 (8 ounce) package Neufchatel cheese, softened
1/2 cup white sugar
1 tablespoon raspberry extract
1/2 cup fresh raspberries
Place all ingredient in a bowl (minus Raspberries) mix together by hand or with a mixer. Garnish with raspberries and chill for 30 minutes
use as a dip for fruit or pretzels.
Baked pork spring rolls
/2 pound ground pork
1 cup finely shredded cabbage
1/4 cup finely shredded carrot
2 green onions, thinly sliced
2 tablespoons chopped fresh cilantro
1/2 teaspoon sesame oil
1/2 tablespoon oyster sauce
2 teaspoons grated fresh ginger root
1 1/2 teaspoons minced garlic
1 teaspoon chile sauce
1 tablespoon cornstarch
1 tablespoon water
12 (7 inch square) spring roll wrappers
4 teaspoons vegetable oil
DIRECTIONS
1. Preheat oven to 425 degrees F
2 .Brown pork on stove and drain
3. In a medium bowl, mix together pork, cabbage, carrot, green onions, cilantro, sesame oil, oyster sauce, ginger, garlic and chile sauce.
4. Mix cornstarch and water in a small bowl.
5. Place approximately 1 tablespoon of the pork mixture in the center of spring roll wrappers. Roll wrappers around the mixture, folding edges inward to close. Moisten fingers in the cornstarch and water mixture, and brush wrapper seams to seal.
6. Arrange spring rolls in a single layer on a medium baking sheet. Brush with vegetable oil. Bake in the preheated oven 20 minutes, until hot and lightly browned. For crispier spring rolls, turn after 10 minutes
My favorite marinate
1 cup orange juice (or pineapple juice)
1/2 cup honey
1/2 cup brown sugar
1/2 cup soy sauce
1 green onion chopped (can use any onion really)
1/2 teaspoon of cyeane pepper
1/2 teaspoon salt
1/2 teaspoon paprika
mix together marinade chicken or shrimp. This also works well on ham
#9 Chicken Sandwich
1 bottle of western dressing
1 lb (or there of) boneless, skinless chicken breast
Swiss cheese
bacon
some buns
marinate the chicken in the western dressing for 2-4 hours
grill chicken using the dressing as a sauce (similar to BBQ)
Fry bacon
when done place chicken on bun with cheese and bacon and enjoy
by the way try marinating chicken in western dressing and grilling it, you will love it
