Fairly simple Bobby Flay recipe I made last night that was pretty good:
Shrimp with Serrano-Mint Salsa
Serrano pepper (however much you want)
Bunch of mint leaves
Clove or two of garlic
Small piece of fresh ginger root (peeled)
Drizzle of olive oil
Splash of white wine vinegar
Salt
Shrimp
Green leaf lettuce
Put the serrano, mint, garlic, ginger, salt, olive oil, and vinegar into a blender or food processor and chop into little bits. Cook the shrimp (Bobby grills w/salt & pepper of course).
Put a few shrimp onto a piece of lettuce and spoon some salsa on top. Eat and repeat.
Also, a creation of my own that I make from time to time:
Sausage and Apple Cabbage
Small head of green cabbage, chopped into small strips
3 or 4 sausages (uncooked), cut into bite sized pieces
2 sweet apples, cut into bite sized pieces
1 onion, cut into strips
A few cloves of garlic, chopped
2 cups or so of white wine
Cinnamon
Nutmeg
Salt
Pepper
Couple tablespoons of butter (optional)
You'll need a pretty large pan for this, like a large saute pan or a wok.
Sear a couple sides of the sausage pieces in a hot pan for a minute or two until golden brown. Set aside and cook the onion (add a little oil if necessary) until it has some color on it. Cook the garlic for a minute or so in a little oil.
Deglaze the pan with the white wine, and add in a couple pinches of salt and some pepper, and the apple and sausage. Add the cabbage on top, and some cinnamon and nutmeg, and another pinch of salt.
Cover and let cook for 15 or 20 minutes, then give it a stir and let it cook for another 10 minutes or so. Kill the heat and finish with butter.
