He he nice. I had bottled steak sauce when I was in the states, it seemed to be a watery and slightly pissy tasting version of our own (far more delicious) HP sauce. I imagine the home-made version would be much less watery and pissy, and thus more pleasant.
I am surprised you go for the grilling method ATE, I've always liked cooking steak in a pan. I have a reassuringly heavy stainless steel griddle pan with grooves in it that give you a nice charred texture and an even heat and keeps it nice and pink inside if that's your poison. I have never tried grilling but I imagine it probably gives you a nice even heat, so I think thats gotta be good.
I like the idea of cooking it over wood-chips; i like barbecued steak better than just about anything (the best bbq'ed sausages have to come close) so if I ever get hold of any hickory and oak logs (probably unlikely in britiain!) then I'll try it. If I'm ever in minnesota I reserve one
