Hand 1: with full stacks you could consider reraising if he's the type to minraise to find out if bottom set is good. Now I would just call and push a safe turn. I don't like a checkraise in these spots because it's hard to play the turn out of position with a big pot.
Hand 2: I think you made your value bet on the turn, and he may have gone into check-call mode with a small boat, or into fancy play mode with a monster. Just check behind. Besides, the hand where he pushed top two on a straight board shows that he's very aggressive with speculative hands, but doesn't really tell you much about how he plays made hands. You may just as well use this opportunity to get some info on that.
